What finish did you select for the flooring? I recently did a full home renovation with reclaimed heart pine flooring from a whiskey distillery in Kentucky. I chose to finish the flooring with Danish oil instead of polyurethane, thinking that the character of the wood would be better preserved. The floors are really showing wear now, and I was thinking of redoing them in poly. What are your thoughts? Will poly prevent the floors from darkening over time? I would love for more richness to develop over time and would not want to stop that process. I would love to hear your opinion.

Hi...On your heart pine floors, would you mind sharing the brand of urethane that you used? Have installed antique heart pine, and now ready to finish.
    Thanks!

That knotty grain looks like pine to me. It's color is more yellow than pinkish, so I'll bet this is new wood. If it's reclaimed, it has certainly cleaned up well.

The floors are Loblolly Pine from salvaged beams that came out of a 100 year old warehouse roof. We had them milled into the tongue and groove flooring as well as the stair treads and handrail and the ceiling material in the bedrooms.
The beams were 14" by 18", and there was still sap at the center!

Correct! It's soapstone in a honed finish. The surface is not sealed or treated in any way and will darken over time with use.

Your local fabricator will be able to show you different soapstones that are available from local suppliers. Soapstone names can be rather pointless since they are not consistent across suppliers. So even if you got the name, you'd still need to look at everything in order to find one that had the look you want. I recommend finding a fabricator who will let you custom purchase a slab or two after visiting different suppliers to find one you like.

The counters extend into the wall thickness right up to the edge of the window, so they are about 29" deep.

They do not stain - completely impervious. The mineral oils are used to accelerate the darkening (oxidation process), but are not required. Super heat resistant also. Only down side, soft and can etch, but you can usually remove any such marks with very light grit sand paper and a little mineral oil. Hope that helps.

Vine Properties are correct that Soapstone does not stain. Soap stone is very soft though and very susceptible to scratching. This page contains a lot of good information about soap stone.Soap Stone Information
