Using a fairly monotone colour in a natural material like limestone or travertine is a good tip to get a long, clean looking wall. Matching the grout colour to tones in the tile also creates a uniform look.

You can add some interest and detail by selecting a tile style that has different shapes and sizes in each sheet (such as this tile product).

When working with a subway tile, which is less expensive, you can use a brick pattern (staggered) vs a stacked pattern to add interest, yet keep the budget down- and keep the long lines to make the room look larger.
