The height of the boxes is very much a personal choice. These boxes are constructed of 2 x 6 boards and a 2x8 cap, making the total height 18". This provides a convenient height for working on the beds without having to bend over. But the higher you make the beds, the harder it is to wheelbarrow dump new compost or soil into it. If you are a taller or shorter than average person, you may want to adjust the height to what is most comfortable for you. We would discourage anything less than 1' as the ability to discourage gophers or other rodents from entering the bed is lost.
