    Just my two cents here. Maple is great for the application as it is a very dense wood i.e. tight grain structure which does not absorb as easily as most other woods.
    If you are using raw wood, that is not coated with polyurethane or other hard sealant, it is important in my opinion, to use "mineral" oil for your wood's surface.
    Mineral oil will not go rancid like most oils derived from animal fat or vegetable fats.
    Note that oil is continually absorbed deeper into the wood so the more often you oil, the more surface protection you gain from stains, bacteria etc.
    Mineral oil was used for decades to treat the old butcher blocks. I use it very often on my butcher block in my kitchen which is actually used as originally intended.
    (cutting veggies/meats etc.) I use a diluted mix of water and chlorine bleach to clean my butcher block as chlorine kills many forms of bacteria, virus etc. Remember, it is used world wide to kill bacteria in public water supplies, clothes laundering and swimming pools to name a few. Just reapply mineral oil when you are done and the surface is dry.
    If I am planning to chop/cut meat I often wipe the block first with oil as some added protection for the wood.
    If you need to sand out stains as suggested, perfectly acceptable and effective practice,
    be sure to oil when you are done sanding.

    I like the idea of a black walnut butcher block top for the island. You could also go with a walnut floor, or a hickory or maple wood floor with a walnut stain. I think this color combo would look dramatic with a white island or even an island in a contrasting paint color as shown in your photo.

    Glad you like it! This is a multi-step custom finish by Quality Custom Cabinetry. It is a slate color with a glaze and heavy distressing with rub through on the edges.

    Wood countertops are very sanitary, and with the proper finish, such as hand-rubbed Marine Oil, they are water and stain resistant, and food prep safe. The top in this photo is an End Grain top which was sealed and oiled. The oil should be reapplied periodically. You should never use abrasives to clean them. I wouldn't advise using a hardwood top as a cutting surface, however end grain tops are preferred for heavy chopping because the grain of the wood is very gentle on knives. We quite often do a combination of hardwood and granite in the kitchen to great effect.

On a simple door, you will see less "dimension" where the glaze "hangs up" in the carvings of the molding. The base color here is Slate...Cabinetry finish is available from Quality Custom Cabinetry.
