On the windows on either side of the fireplace, I would suggest a one-way draw, floor to ceiling on each window, drawing in towards the middle. I am in love with off white wool right now. Wool hangs so beautifully. Be sure that the curtains are lined.

In the dining room, I would do the same fabric as in the living room, but using a pair with the pole close to the ceiling and on rings. An Area rug under the dining table will help that room quite a bit also.

Over the sink, it is a question if you need anything. If you do, I would take it all the way to the ceiling also. It just makes the rooms feel more proportionally correct, as opposed to breaking up the space.

I would go for white shutters, the larger type. This is what i've done. White as well. It allows plenty of light in and can be angled for privacy.

Nice window treatment in the kitchen! I made Roman shades for our kitchen, too. A more tailored and updated look, but softer than blinds.
