Need help with layout and design!

We have a 1978 tri-level home and are tearing out the kitchen, dining room, and living room and making this one big open concept kitchen with cathedral ceilings.
We can move all plumbing and electrical very easily, the only things we cannot change are the front door, back door, windows, and entrance into bedroom.
We got one rendering, not excited!!!!! I included that in the pictures. The first picture you see was before walls were taken down, the other two show the existing state after demo!
All the appliances have been purchased which include double ovens, dishwasher, stove top and fridge. On my wish list is a built in plumbed coffee station... We'll see if we can pull it off? Hopefully with a little help from the experts like you, we can all see it come to fruition together!!
I think a 2-tier island would be awesome in this space but that is all I can really invision. Please give me your input on any layout designs you think would be functional and modernize the space!! We also want to have a small area for TV and conversations. Built in cabinets with a fireplace??

Did you have a structural engineer design the glue lam or steel ridge beam and posts needed to be able to vault the ceiling and remove the walls?

I can't read your plan very well, but I don't see why the island couldn't be longer. Maybe 3 stools on the long side and one on the right. There's so much unused space on the side.

What if you rotated the dining table and moved it to the left? You need more living room space.

I'm not an expert and I can't see the plans well either, but the first thing that crossed my mind is that there doesn't seem to be a lot of cabinets or counters for what sounds like a large space.

With the collar ties and supportive walls gone, you need to worry more about the roof falling in than how to figure out the layout. That shoud have been done--by a professional----before a single bit of demolition happened. You municiplaity would have required those drawings and engineers calculations in order to issue the permits that you needed to do this. You've got an EMERGENCY on your hands here!

I have to Agree with Sophie.... any tri-level I have ever opened up has had a load post in it with a beam going across the whole room! You certainly need to address this right away. Once that is done, I think the next question is - what areas need to be in this space ? Is this your main living area? If so then there should be a couch and charis for tv viewing, a "dining room" area and the kitchen... is that correct? I have attached a couple of photos from a tri-level done within the last couple of years, maybe it will give you an idea...
