Hi Chezmonmi, I'd recommend that you perform a search on this topic using a search engine like Google. I did so and got a ton of hits on articles about growing potatoes in containers. Lots of great info in each article that came up on that search. Below is a link to one of the articles I found.

How big are the buckets you are considering using? Sounds like the authors of the articles I found are suggesting that large containers are a good way to go - one of the articles suggested that plastic garbage cans can be used with good success.

I am using a plastic garbage can that has holes drilled in the sides and bottom cut out. It was previously used as a compost bin. I plan to add more soil, old leaves and compost in layers as the plant grows. This is the first time I've tried to grow potatoes... but they are always sprouting in my compost pile.

There is also info on YouTube about this. It's generally called No Dig Potato growing.
