100 yr old fisherman's cottage remodel

I have recently purchased a waterfront property and am having great difficulty with the interior walls-should they stay or should they go? All the walls (except bedroom & kitchen) are a stained barnboard. I am thinking of painting the entry barnboard walls white (and all trim) and replacing the rest of the walls with drywall to be painted a sandy color as I am hoping to achieve a "beachy" feel. Any thoughts regarding if I should drywall or paint the barnboard would be greatly appreciated. I should mention the whole house also has hardwood flooring the exact same color as the walls.
