Curing temperature?

I've often wanted to try hypertufa and this winter might be it. One question - The place I would be working would be our basement. In the winter, the temps down there hover between 5C (40F) and 10C (50F) if I don't have the wood stove going. I would probably make it in the room with the wood stove, but move it to a cool closet with the mentioned temperatures because we have cats which like to get into everything.

So, can curing be done at 5C?
