The molds are probably for concrete, rather than 'tufa. Tufa isn't the strongest stuff for stepping stones -- are you sure that's what you want to use? The organic ingredients will rot out in a year or two, leaving a lot of small holes.

You could try your idea and see how it works. If it doesn't, well..... that's what holes in the ground are for. ;-)
