pruning fruit

A was at a friends house the other day and his peach tree was like a bush, branching out starting at 1' abouve the ground. He told me he got 157 peaches from that tree this year.

As it turns out, some cattle got into one of my orchards and broke a 2" trunked moonglow pear off about 2' above the ground. Do you think it will survive and is pruning that low a good idea? Thanks
