Vegetable suggestions for newbies :0)

I've never W/Sn veggie seeds before, just flowers. In our zone, seems it takes FOREVER to get any veggies harvest-able (unless I buy plants!) before very late summer, unless maybe I try to W/S them...

Can anyone suggest some of the EASIEST ones to W/S for a small veggie garden? My fav type of veggies would be these:

Snow Peas

Green beans

Beets

Sweet Corn (is it hard to grow?)

Cucumbers

Squashes/zucchini

Tomatoes (eating fresh AND for freezing)

Green/yellow/orange & red peppers (eating fresh & freezing)

Lettuces (not iceberg though!)

Broccoli

Also, I'm not sure what the difference between organic and non-organic seed is....I'd rather not have any chemically-altered foods (I won't use any sprays/pesticides) so does that mean I need to go with organic SEED (for health/safety sake) too?

Thanks for any help. :0) Phyl
