Japanese maples reseed here easily. So I would think they would be a great candidate to winter sow. One good thing about winter sowing is that there is no need to soak your seeds before sowing.

Oh and some dogwoods are native trees so they would be another great candidate!!

I winter sowed both Cornus florida/white flowering dogwood and Cornus kousa/Japanese dogwood last year and had close to 100% germination. Both were winter sown December 13, 2010. C. florida sprouted May 8 and C. kousa sprouted May 2. I did not soak the seeds prior to winter sowing. C. kousa grew to 14" with multliple large, healthy leaves before going dormant in November. I grew so many I gave several away to neighbors & friends.

Both types of dogwood are supposed to require 105 days of warm followed by 105 days of chill in order to germinate. My results would suggest winter sowing apparently does the trick regardless of that.
