Flowers mean that your alocasia is in a perfect condition. But it's leaves won't be bigger and bigger cuz as you wrote- most of the energy is used by flowers. So just remove them all.

The bluish look of the unopened inflorescence in your picture tells me that your plant is not a true A. macrorrhizos. A. macrorrhizos and those closely allied have blooms that are not bluish at all nor are they matte in finish, as yours is. By contrast, they are a lighter green and usually on the shiny side, and when open and mature (male anthesis), the spathe reflexes or falls back away from the spadix. A. odora and allies have the matte bluish inflorescences and the spathe does not reflex back on full maturity.

At the link, scroll down to the second picture to see a typical A. macrorrhizos inflorescence. The one pictured has just opened and is not yet at the stage where the spathe reflexes back. But notice the color and the lack of a matte look or finish.
