Will my taro recover?

I sectioned them up, potted them up in pea gravels instead of the soil it came in. I had to remove the bottom of the root ball due to the new pot not being as tall as the original pot. Now the leaves are all wilted, I think I'll just cut them off. Will new leaves grow? How long will it take? I have the new pots in the pond, with the water level about 6" above the soil line, is this bad? Should water level be even with the rim of the pot (soil level)?
