Using seed starter trays

I've been winter sowing for the past 3-4 years and have loved it! This year though, I've got a baby and just so much more going on in my life so I've decided to make things simpler. I used to use milk jugs (given to me by others since we drink raw milk) but this year I splurged and bought a couple "greenhouse" trays with 'Jiffy Peat Pellets.' I was wondering, will those work for winter sowing? I'm concerned about there not being a lot of space above the plants. It gets pretty cold up here in Michigan! Has anyone tried this? Also, how to I make it ventilate? It pains me to think of cutting holes in that nice plastic lid. Is there any other way or will that be how I'll need to do it?

Any advice is appreciated. :)
