Tomato Pie

Has anyone tried the "Carlile's Tomato Pie" recipe that won the state contest for tomato recipes? I made it this weekend and it's quite good. Plus you have another use for all those tomatoes! The recipe only calls for about 8 medium (for 2 pies) which is a mere drop in the tomato basket for some of you.

    No, I haven't and wouldn't be tempted. Too much fat :-(

    Ingredients:
    9 ounces shredded mozzarella cheese
    10-12 basil leaves
    12 pie shells 4"
    6-8 medium-sized fresh tomatoes
    6 slices bacon
    1 tablespoon or 1 oz garlic, salt
    ½ bunch green onion
    16 oz mayonnaise

    Directions
    1.Fry bacon, drain, then finely chop and reserve.
    2.Peel tomatoes, slice thinly and place on paper towels to drain.
    3.Sprinkle with garlic salt.
    4.Combine mayonnaise, cheese, green onions, salt, and pepper for topping and reserve.
    5.Cook pie shells per directions.
    6.In the cooked pie shell, layer the tomatoes, bacon and basil.
    7.Cover completely with the topping.
    8.Bake at 375° for 30 minutes or until golden brown.

    I don't like tomatoes, nor do i like to cook, so i of course haven't tried it - however, have family & friends that love them - so i just emailed the recipe to them. Will let ya'll know if they like it, thanks for posting.

    I do like tomatoes....and the microwave is my best friend ;-)....well, as y'all know.....there's yardening ;-)

    I do LOVE the microwave - and take out - and sandwiches - and playing in the yard....my husband knows how to cook...:)

    Yes, I think this recipe is loaded with fat grams, but I splurge every now and then. To me, it reminded me of a pizza-like taste (but better). I also mixed the garlic salt in with all the topping ingredients. I usuallyl make a recipe as stated the first time and then experiment later. I don't know what results you might get with low-fat mayo but it might be worth a try. Some more experienced cooks out there might have an opinion about that. I think you could also substitute turkey bacon, sausage, or just leave out the meat if you want.

    I never made the tomato pie, but I do make a version of it. I start with my pizza dough and then line a lasanga pan with it. Then I spread pizza sauce on the bottom, then alternate roasted green peppers, tomatoes, onions, mushrooms, julianned basil, and mozorella (s.p.?) cheese. It comes out like a big thick square pie and is great! I also add garlic sometimes too. I haven't been able to make it this year because I had to pull out my tomatoes. They developed a disease while they were at their peak.

    I really like an Italian appetizer, Bruschetta. Thin slices of bread topped with a mixture of diced tomatoes, fresh basil, a little olive oil, salt and pepper. I would kill for this stuff! LOL. Also good with a very thin slice of parmesan cheese on top.

    I am about to turn into a tomato. I have been eating tons of them since the end of June. Production is really down right now, and many of the plants look like they are struggling to survive, but I am hoping the ones that make it crank back up in September for a decent Fall crop.

    That pie does sound interesting. But a whole jar of Mayo? And bacon and cheese? I couldn't bring myself to make it even if it is magnificent. Although I might order it in a restaurant :)
    I make my husband bruschetta (it's pronounced bru-SKET-ta) for lunch several times a week. Although I do several variations, we like goat cheese and grilled chicken on top of the tomatoes then everything toasted. A bit more substantial for a meal.

    I am going to miss my tomatoes! We eat several a day and they are sooo good. The rain this year has produced a huge crop, with the grape being the most prolific.

    A lover of bruschetta myself, and this thread is making me hungry every time I read it.

    Remember, the recipe makes 2 pies. I made 2 with the intent of taking it to work - those guys will eat anything free. We ate a slice each for dinner, so I had a whole pie plus an almost-whole one to share. Everyone loved it, but I agree, you need to make it a side dish.
