Teesaz, surely you can eat the green... Were these onions ntended to be used for the green tops? Or, were these larger onions? ... (if larger onions, you may not want to eat the green tops). What onion variety did you plant?

In our area we mostly plant the white shallots for the green tops. We plant the sets in July and continue on into December. These produce the green tops that are used in many recipes. When ready for harvest, sometimes we only snip off the green, other times we take the whole stem and use the white parts as well as the green. The onions continue to produce until April/May. At this point they begin to flower, dry up, and then make new bulb clusters. The clusters are broken apart and replanted as above.

There are an assortment of shallot varieties which include yellow and red. However, I have not had much luck with these. There are also bunching onions which are mostly what you would find in the grocery store produce section. I have not had much luck growing these either.

it was one of the onions in a bag from the grocery store. I bought a small bag, maybe like 5 onions in a mesh bag. I think they were white onions. it wasnt squishy or rotted, just started sprouting like mad.
