In Ron Engeland's book "Growing Great Garlic" he states that not only seedclove size, but seedbulb size is important. "Bulbs two inches to to and one half inches in diameter consistently produce the most desirable results..."
So, according to his theory the fat cloves from the right sized seedbulbs give the biggest bulbs the next season. That's what I'm going to try with my harneck Spanish Roja.

Number of cloves per head is determined by variety as well as by cultural practices. Porcelains, for example, will have far fewer cloves than an artichoke.

Lorz Italian always did very very well for me when I lived down in the south (Z7 Nashville) with a good number of cloves that were all medium or large. Nice flavor too, though on the mild side when cooked. Not too spicy.

Agree with Hortster. You don't just save the biggest cloves, you start with the biggest bulbs and the biggest cloves from them for planting. All the rest are for cooking and processing. You really can't judge this when just dug, it really needs to be fully cured first.
