Whatever price the local market will bear. It varies wildly on area and time of year.

A lot of it has to do with who buys from your area market. Some places there will be urbanites who know nothing about growing food who will pay $10/lb for garlic that has a slick sign promoting them as 'extra fine grade, premium quality' or simply call them 'premium garlic and list the actual name of the variety. Other areas folks will just look at you and laugh. It is all about your area.

I expect I am solidly in the second category. Our population is rural, with a high concentration of educated/professional types. $10 a pound is getting close to seed clove pricing, and I expect even those who would appreciate true quality fresh garlic over garlic powder or minced-garlic-in-a-jar would laugh at that sort of pricing. I was just wondering what sorts of pricing people were getting. I am not even sure what would be "worth it" to me as a vendor, perhaps I might be persuaded to part with some of my crop for as little as $5 a pound, but not for much less than that. Maybe $7.50?

Right now I get $6.50 for most of the table stock I sell at farmets markets. I will go $8-10 for seed stock and $10 -12 per lbs for braids .
I live in an area where very little garlic is grown and most are just learning to use fresh garlic (instead of garlic powder). I started at $4.00 lbs 9 years ago and have increased since then. The market I sell at now is in a larger city with a large number of professionals willing to pay a fair price for local, organic grown food.

Thanks GL; your perspective and experience is valued as always. Is your differentiation between table and seed stock pricing based on the size of the bulbs (ie 2.25"+ gets seed status, and the rest slated for table use)?

With 800-1,000 cloves slated for my garden this fall, I should have something left over for market next year. (The 220 cloves from last fall will not see my kitchen through the winter after the seed stock has been selected.)

Seed stock is usually 2.25 + and elephant a little larger.
We usually pick out the really small ones and use them in garlic powder , jellies , dog biscuts , our cooking and garlic jewlry.
We are doing alot of seed saving this year so we are not selling much seed stock. We are keeping anything over 2.5 and some of the new varieties 2" for seed . We hope to plant 500 lbs this year, a big step up for us.
