I know they buy in bulk and re-bag by the Lb. Order early or they get a little mildewy late in the season. About 3000 ft elevation so their fall is earlier than mine.

We used Tesch Farms last year, and we were very pleased with the quality and price. We planted French Red, Dutch Yellow and Grey Shallots. We just received an email that he is a little behind with preparing to ship, but plans to start shipping late August. He is very good about returning calls if you have any questions.

Speaking of Shallots, does any one else grow Grey Shallots? They are so different than the yellow and red. From what I have read, they are the favorite of French chefs, but they seem harder to peel and have a "hot bite" that I don't like as well. Does anyone else find them to be superior?

I grew French Grey shallots for a few years, but I just found them too impractical because of the hard skins. I even called the company (Territorial Seed), and they contacted their supplier to ask why the skins were so tough - I thought maybe I was doing something wrong - the supplier said that is how they are supposed to be. I will say they are superproductive if you don't mind the small size, and they are long keepers.
The flavor has a little too much bite raw, but roasted I do think they are superior to the bigger varieties. They carmelize better - great texture all the way down to the middle and supersweet.
Superb! OK - maybe I should go back to growing them...

Thank for your suggestions. I decided to order from peaceful valley. They both had good prices but PV had more selection of shallots and garlic so we ordered from them.
