I also see more double onions with whites, especially white onions grown from sets. I pull most of them as green onions, but the ones that do bulb are about half doubles. There are some Monsanto/Seminis hybrids that don't do that, but not the direction in which I want to take my garden.

We simply eat the white onions first, followed by the red torpedoes, then yellow storage onions, then shallots, cippolinis and yellow nest onions.
