Anything above ground and exposed to the freezing winter temps will be frozen off anyway. You could cut off those flower heads now if you wish since they will not last the winter. Besides, such plants would think that they have already completed their second season and will probably die. What you need to concern yourself with is saving a few younger plants. This year's growth will rot away in the spring and new will start. That's where your seed stalk will come from.

Thanks, I have some smaller plants that I can use. I didn't think about the plants thinking they were 2 years old already. Makes cents.

When the stalk dries out, dig and you should find small bulb/s at the base of stalk. These will grow next spring. At least that what they do here. I get both seeds and bulbs.

what do you do with the bulbs?

If you have lots, use some in cooking. So far, I replant in fall for regular green leaks. Enjoy
