Do they actually make cherries?

No they are just flowering trees. They look amazing but do not produce fruit.

Well, shoot; if you just want some beautiful flowers, why not buy a peach and get the flowers *and* the fruit. Peaches do great here.

Are there any particular varieties that do best here in the valley?

There are some good suggestions in this link. However, it's past prime time for planting stone fruit. :(
