If the plant was large and healthy (sounds like it was) then it should pick back up. My bloodleaf started and stalled 3 times over winter and has finally gone back to regular growth. Bananas can take quite a hit, rest, then go on like nothing happened. It could still die back but I sure wouldn't cut it. Even if the stem begins to decline you didn't loose the plant, it will redirect the mother's energy into new pup production.

Plenty of pups going on, but the last leaf to start is still only half unfurled (probably in that state for several months now) and the new leaf in the center appears to have rotted. Not sure if there is just a single growing point on the stem... I can wait until all the older leaves die off. I'll leave one pup growing as a precaution.
