Im not sure what you mean sacks of fluid but Bananas always make the number of hands that the plant / corm has energy to support . The rest of the fruit is sterile or just doesn't develop, They still produce nectar which I assume is the fluid you see. First few bunches tend to be smaller till the corm gets large enough support larger bunches . This can be improved by regular fertilization and sufficient water, the two things bananas love .....

You are correct, it is the nectar, sacks - or whatever they are called. Should I remove the the growth below the the last hands or should I let it go on?

I have several plants that are over 10 feet high. I guess that maybe I should cut some of them out to provide more nourishment to the remainders.

Cutting the Male flower off is more of a personal choice , If you do make sure there is at least 12" of stem. as it will slowly get dark and make its way to the fruit if you cut it to short.... I leave it alone...
Rule of thumb is 3 plants to a corm, this allows for ongoing production and you should get fruit every year barring a hard freeze.
Another trick is to mark the date on your pups when there small and see which ones fruit during the summer and get ripe before winter comes... Then only keep the pups that are produced during this yearly time frame.....
