Purslane is edible dont remember if pigweed is or not

I had a weed like the one in the first pic about 2 years ago. It sprouted in this pot and I was curious to see what it would turn out to be. It grew super fast, got this tall in just a few weeks. I think it was about 6 feet tall. Even though it was a weed, I still watered it because I wanted to see just how tall it would get.

First one is amaranth. It will drop LOTS of seeds and you'll have a forest of amaranth next year.....and the next.....second one is purslane, as stated by others.

What are you going to do with your weed pumpkineater? That looks like mine. I did try to plant few seeds of amaranth but no where close to where this is. Will I have a forest if I don't take these out.

I could try to eat them, but wouldn't want to get sick without knowing for sure. I don't use any roundup or spray pesticides so at least I know these aren't contaminated. But, you know how there are plants that look like others but in fact are poisonous.

It sounds pretty labor intensive and one or two plants will probably just give you a hand-full of seeds. Get that forest going!!

Prolific weeds. Purslane and Palmer's amaranth.

Do NOT let pigweed go to seed ... it produces thousands of tiny seeds.

Some Amaranth varieties may be edible, but Palmer's Amaranth is tough and bitter.

the small purslane leaves are crunchy and acidic - nice addition to a salad oir wrap.

Is pigweed the same as amaranth?

Toucan, That picture is from a bout two years ago, the weed is long gone now. It just kind of dried up and died, but I don't think it actually set any seed, because I have not seen another one of these weeds since.

Thanks, I have removed both weeds. I tasted the purslane. It was just ok. Funny thing is the amaranth that I tried to plant in the raised bed didn't sprout but this weed did.
