you will see a website called eHow, and it has information specifically about Florida native and cultivated plants that provide the best sources of nectar and/or pollen for honeybees. As for me, I love orange blossom honey; some of my fellow Texans actually don't like it's taste but I think it's great - it's a little different and takes some getting use to. But the best tasting honey (IMHO) is Tupelo honey (from Florida Panhandle swamp areas). I think it's the only honey that doesn't crystallize - it's got kind of a greenish cast to it.

An aside note: most people (non-beekeepers) have heard of the honeybee dance that provides the other bees in the hive with information regarding the distance and direction to the nectar source but another thing the forager/scout does is, give out small "samples" to those she's trying to recruit to the nectar source she's been working. The bees will actually sample nectar from different foragers and make a judgment as to how sweet the nectar is verses the distance they'll have to travel to the source. In that fashion, they will choose the sweetest nectar sources that are closest to their hive (it's an energy/efficiency judgment call they're making). And the nectar sources may change throughout the day as some blossoms only produce their nectar during the morning hours (closing in the heat of the day), while others may produce nectar all day long. So collectively, the worker bees in the hive are making these kinds of judgments continuously.
