Castor bean plants

I grew 2 castor bean plants for the very first time last summer. They were HUGE! However, the seed pods only appeared just before a hard frost, so I wasn't able to save any seeds.

I picked up 4 plants from the nursery this year, but they seem quite different from last year. This year, the seed pods are red, and the plants are much, much smaller.

Are there different types of castor bean plants?

Since I've never grown them from seed, can anyone tell me how to do this, and can I do winter sowing for these seeds? Thanks.
