They should already be dormant, going from outside to fridge. In other words, they should be fridge temp and looking like "death warmed over" by the time they are tossed into the fridge. Light doesn't seem to be an issue. I like a cold attic, by a window, dormancy better. This way they respond to the cues of declining and then increasing photoperiod, waking up on their own in late winter.

I've been putting mine in the fridge each fall for 5 years now, light is not an issue. You can either leave them in the pots (I cut all my sarracenia pitchers off before bagging them) or remove them, rinse the roots in rain or distilled water, bag them and pop them in. I usually hit mine with a few sprays of a SULFUR based Fungicide before bagging.
