fruit pruning ?'s

This year my Lime tree and Orange tree are loaded with blooms and baby fruit. These are potted trees that I roll in and out of a makeshift greenhouse every year. I've had them for years and they bloom quite a bit but this year something must have changed because they are covered.

There's no way the branches will support this many fruit. I imagine some of them will naturally fall off but is there a technique used by more experienced citrus growers to gauge how many fruits to remove and when to remove them. Can the tree support a bumper crop if I rig up some sort of scaffold to provide support?
