Trellising for Cuts

I want to grow clematis for cut-flower use. I have seen a few pictures of cut-flower trellising at Chalk Hill.

They appear to encircle a pole with a wire trellis that makes the clematis grow upwards in a totem fashion.

I assume this is so the tips will eventually flail outwards (be unrestrained) and cut easily. But I am only trying to piece the puzzle together and could be mistaken.

Does anyone have any insights as to the trellis-wrapped pole and why this is a preferred method for cuts? Or any other helpful tips for cut-flower clematis specifically?
