Ok so I both a shiitake log from gmushrooms.com... its a composite wood log preinoculated and its already got buds on them.

I am about to start my second log and noticed that there are a lot of buds on the bottom of the log. The company said to scrape them off and not to start the log upside down (in two emails by the way b/c I really wanted to not waste the buds).

Why can't I start the log upside down? The company has not explained this to me? I really don't want to waste the buds forming on the bottom of the log (most of them are on the bottom of the log)
