I've read that deer tend to avoid eating plants with very aromatic foliage, so you may be fine just by researching shade plants with aromatic foliage. The problem with shade plants is that they tend not to waft, even if they are aromatic. And most aromatic foliage doesn't have any scent until its bruised. Good luck!
