That's funny, Konrad. I went and dug some parsnips and had them for lunch, too. Absolutely mouth watering. Must've been a good day to pick parsnips. Very, very muddy, but you're right. They pulled out so easily. Now, I have to get busy and dig the rest of them out.

I know, you're the Parsnip Girl!...remember from other years.
I don't grow them every year, but one really should!... like you Shauna. One winter, my whole two rows where cleaned out by mice.

I really have to check out my parsnips too. I still have a few left in the fridge downstairs, but the half-row I didn't get around to digging has new tops 2 " tall - they grew very well under the snow. I've never wintered parsnips before, and I can't wait to try them. Konrad, my sister lives near Fairview, and they still have tons of snow too.
