Fig fustration
I live near Houston Texas. About I 6 years ago I bought a fig tree (celeste I think). When I was young my grandfather had a fig tree (not sure what typ) and I enjoyed eating them and my parents would pick a whole bunch of them and make fig jam using strawberry jello mix. My tree has gotten big enough to produce a whole lot of figs but i found that the bugs and birds would get to many of them before I could. If you pick them too early they ate not sweet and have a lot of milky sap in the stem. If you wait too long they are over-ripe and small like vinegar and the insides are frothy and full of bugs. Since they don't all ripen at one you have to go out each day and pick the best ones, which is hard to determine. .Tin the past I just picked some and cut them into quarters and drided them in the oven at a low temp. This year I bought a hot water canning tub so I could make preserves or jam. We had a very dry spring and they were just starting to turn from green when we had a whole week of rain. This causes the ripening ones to swell up and because of that the hole in the bottom of them enlarged and they started to get over ripe and full of weeveles faster that normal. I don't think that they will ripen any of the tree if picked a little too soon. I still have some green ones and an I am wathing them. The question I have is it OK to pick them as they ripen and freeze them until I get enough to process in the canner? Does anyone else do this?
Thanks,
Mike
