pruning a celeste fig tree

Hi, I planted a 3 foot double trunk fig tree in the spring of 2003.Now the tree is 14 foot tall and 10 foot wide.I have pruned and shaped it every fall, and it bore nearly 1,000 figs on the first crop this year.I don't want it to get any taller or wider. How far back should I prune it this year?

My second problem is,the tree is growing out of the ground. The soil here,(southeastern North Carolina)is 90% sand.I have 3 large roots on the surface growing outward 4-5 foot. There is also a maze of smaller roots 3 foot out from the trunks on the surface.I have staked the tree as it was shifting in the wind.We are very prone to Tropical Storms in this area, what do you suggest? Can I build a raised bed and fill with soil?

Any helpfull suggestions would be most appreciated.

Thank You, Vinny
