I have brought them in wet but brown and let them dry inside before shaking out the seeds. I'd give it a try. If your seeds aren't ripe enough, all you've lost is a wee bit of time. Poppies are pretty much the easiest seeds to collect, for me.

Let them ripe on the stem outdoors, some pods will turn black, but that will be ok, they will mature inside the pod. Once you hear that shaking going on, their ready to harvest. If they are still green, let them be, I've collected poppy seeds in the middle of November at times.
