I don't know how long it will last in zone 6/7, but when I plant cilantro in late summer it is one of my most cold-hardy greens. Last winter it out-lasted the lettuce.

Parsley is a biennial - it will go to seed in its second year.

The parsley does still look lovely and so do the sage thyme rosemary and oregano...... but (aside from the parsley of course which loves cool weather) the marjoram looks gorgeous...... it looks prettier (lusher.....) than it has all year...... wonder if it likes cool weather too?

chives are more a perenial but they should like the cool weather and may produce all winter depending on your temps. Mine never winter kill in mid 6 but some years go dormant for a few weeks.
