I have/had a huge ginger plant that got frozen in one of our rare Gulf Coast 20 degree freezes. All of the mature stalks are brown and looking dead. There are a few, very few, 2" sprouts starting to come up. I'm just devastated. The plant was 12-15 feet tall and the base is 5' across and it had gorgeous blooms. I don't know the name of the plant and didn't have much success looking it up on the 'net.

Is it safe to cut back the rest of the plant? How close to the ground should I cut it? Anything else I should do for it?
