Depends on how close they are to maturity. If the seeds are fully formed yes. If not they will shrivel. Immature acorn squash can be used as a zucchini substitute.

Are they dark green? I think if they are dark color, they should continue maturing.
As a tip, next time get a big piece of tulle fabric, and cover the plants, from seedling until the first female blooms open. That's what I did this year, since I have major SVB infestation in my area.
Then you have two options... hand pollinate the female flowers and recover them, or just remove the covers fully, and hope to get a good harvest before the SVB do them in. What I do is once I remove the tulle fully, I will spend time covering as much of the exposed vine with mulch, and dirt, encouraging extra roots, and protecting the main vine. That should extend their life more.
