And thinking of a good way to use them. I made Provencal Vegetable Gratin.

What are your favorite ways to enjoy zucchini?

Silvia, that veggie dish looks wonderful! There is nothing like eating garden fresh all summer. I pretty much turn vegetarian when all the delicious fruits and vegetables start coming in. All I need is a just picked tomatoe on two slices of bread with mayo, salt and pepper, a glass of tea and I am all set. Here's to a great summer harvest!

I've had so much zucchini that I resorted to canning zucchini pickles. They turned out good.

    Silvia,

That Provencal Vegetable Gratin looks delicious. I've bookmarked it and will try that tomorrow night. Thanks for posting that!

One of my favorite ways to fix zucchini is to cut into matchsticks along with yellow squash, then do a quick sauté in butter, garlic and white wine. Top with fresh grated parmesan.

Silvia, my husband asked me to show you the picture of your recipe that we ate tonight. This is my style of cooking so it was a pleasure to make and especially eat. We ate almost the whole thing. The tomatoes are "sungella", an orange tomato; cocozelle zucchini; and butterstick squash. What variety of green zucchini are you growing?

I like mine in Chunks in Meat Saurse or in Rattatoe or Gratted and Fried in Butter...
    ***I'm Sorry about my Spelling***
Anyone Else like it like I've listed?

I cut mine in slices longways and marinate it with Good Seasons Herb and Garlic salad dressing. I add more Italian season and garlic powder to it. Then we grill it. I also have mushrooms and peppers in with them. Put some chicken on the grill too and you have a whole meal.

Syl, that looks so yummy. I just hate to have the oven going in the summer with the a/c on. I have been trying to use the grill like an oven and will try this one like that too. My grill has two burners so I shut one off and put the food on that side.

Ninecrow, I also make a rattatoulie and have it over pasta, with or without meat or chicken. *** I don't think I spelled it right either.:o)***

Good ideas! I like ratatouille too and I am waiting for more eggplants to ripen to make this dish.
    I like fried zucchini flowers.

    Your recipe sounds yummy!
I know what you are talking about, when I lived in Arizona I cooked everything in the grill. I love the taste from the grill.

We are now into the heavy harvest time of zucchini and squash in my garden. Have to harvest every other day or I wind up with baseball bats!

The other half likes to slice the larger squash and zucchini in half length wise and scoop out the seeds to make a boat and fill with sausage and/or cheese and bake. I like to slice and stir fry.

I have tried making my first batch of pickles. gherkins. I used cucumbers and tiny squash. Can't wait till I can taste them to see how it came out.

I've already blanched and froze lots of squash for use in the off season. I also shred and freeze bags of zucchini for use in zucchini bread.
