Harvested acorn squash too soon?!

6-7 of these nice big acorns have been dark green with just a bit of dark yellow on the bottom for several weeks--looked same as ones in the stores, so this morning I cut them off the vines...But as I cut one open to prepare for dinner, the flesh is not the deep yellow-orange I think it should be, kinda pale, nor are the seeds real hard. Have I just wasted all of those squash, or is can I prepare them into edibility anyway?

Winter squash should stay on the vine to mature and ripen.
You can tell this if the stem is almost dry.
Perhaps, You may need to give them additional time out on the sun, to get more sweet.

Just a thought but if you're not sure about something be ready for harvest then just harvest one and try it.

I think winter squash are ready when the stem of that particular squash is dried and brown. I have had acorn squash ripen off the vine. Just leave the uncut ones sitting for a month or so and see what they do.
