Mango Regrowing from Rootstock

I had thought my mango tree had died in the freeze that struck Florida back in January. Most of my other plants recovered, and I wound up with a mango skeleton in my back yard. I did not remove the tree, however, due to an abundance of other projects. Then, just today, I saw that there were new shoots growing up from the rootstock below the graft!

Now, being a grafted tree, I realize that this regrown mango is not the same cultivar that I had purchased. Having done a little bit of research, I suspect the rootstock is of the "turpentine" variety. My question is... if I let the tree grow back from the rootstock, what are the characteristics of mango fruit from this cultivar ("turpentine"), given that it's primarily used for rootstock and not for its fruit? The mad scientist in me wants to know...
