Pumpkins, Squash & Gourds

Green Pumpkin & Butternut

It's getting close to winter here in central CA and I still have green pumpkins and butternuts on the dying vines. What can I do with them? Can they be ripened off the vine (some are all green others partially green)? Any recipes for green winter squash?

I've never had this problem before! Would love to have some suggestions.

I have good new and bad news. The partially ripened (50%+ orange)pumpkins should be able to complete turn orange. Any completely green pumpkins will likely remain green. I had the same problem this year with my pumpkins and the partially orange ones did ripen. I can't speak for the butternut squash because sugar levels may be a factor and I don't know if butternuts can develop adequate sugar levels when they were picked green off the vine. Best of luck!
