Interesting Tanya. I've not run across that. When I did a search for green-fleshed squash, I found this:

Just as an observation: I've never tried but sugar pumpkins are the same species as zucchini (which are immature when picked normally) so I would be fairly confident there's nothing wrong with them in terms of edibility. That said, they may taste a bit weird but should be a similar flavor.

I wouldn't use them for pies. They would be better served in a cooked dish (possibly similar to the pic posted).
