Hmmm. The Sweet Meat squashes that I still have in my living room are still blue/gray as the day I picked them. I do have a Buttercup that is less green and more orange every time I look at it.
As far as being edible, I would assume that it's good until I found signs of fungus or rot. And even if part of it is rotten, likely you can cut that part out and eat the rest.

cnv7, this is absolutely normal. Mine are doing the same every year. They are still fine to eat, just the final ripening stage. My blue maxima varieties (such as Sweet Meat and Jarrahdale) turn pink more than orange, others turn bright orange. C pepo Delicatas have green stripes initially, but these stripes turn orange in storage. C maxima Buttercups can get quite colourful too in storage. Butternuts turn from pale to buff-brown, some other moschata squashes are green when harvested and turn buff in storage.

I don't know why some get this final colour colour earlier than others, maybe they were cut more mature, but almost will change in the end.
