They'll be fine. At the worst, you've set them back in terms of feeding themselves for next year's bloom, so it's possible that you won't get quite as much bloom next year as you might have if you hadn't cut back the foliage. The plants themselves, though, will be fine. Just let them grow back and don't trim them again.

You should remove any dead, dying, or diseased leaves or parts of leaves as they appear, but leave the healthy green leaves in place. In your zone, you may even have some green leaves that persist through winter. If that's the case, cut them back to the ground in early spring before temps rise to 70 degrees. That'll get rid of most iris borer eggs on your leaves (if there are any) before they have a chance to hatch in the spring.
