Let them dry, on the plant if possible. If rain threatens, harvest your dry pods. You should not need to can black beans, they are easily prepared from dry, and store best that way.

The only reason I can see to can them is to mix them with other products like pepers or tomato sauce for a quick(er) meal.

Nah, by the time there ready to be dryed the vine has already given them all it will, when they dry on the vine its because the vine is treating them like they no longer exist.
