Bamboo Blues for a Neophyte

I have some seriously sad Bamboo. I bought them last year and I have always kept them in gravel with water. But recently they took yellow. I have been reading the forum and I see a lot of people talk of planting them. I have pots and soil, but before I put them to dirt I would like to be sure.
